Ante Up

i know of no more encouraging fact than the unquestioned ability of a man to elevate his life by conscious endeavor.
- walden, thoreau (1854)

I just saw a charlie rose interview with david chang, chef and restauranteur of the momofuku restaurants.

I'm glad he got his. One part that resonated with me was the point where he was trying to articulate his issue with front wait staff at times over how they tend to treat hispanic prep cooks.

He basically articulated their immigrant experience and how he sees his own father's experience as a prep cook saving up money for his family in them.

I got a sense that he treats the immigrant experience as sacrosanct as well. And I will eat more bowls of his delicious yet really expensive noodles in support.

He mentioned achieving one goal of being able to provide health insurance for his cooks and mentioned the possibility of paying for english classes if need be so that some backend workers can serve up front and make more money. Health insurance for his workers was a goal of my dad's too that he was proud to achieve.

While Dave and my dad have been working hard, i'm slowly recovering from a bachelor party in vancouver last weekend. The slow recovery was hampered by getting drinks last night with Jonny and co. for his book that recently got published. The cover jacket looks good and from the section he read at the reading, it sounds like it'll be fun to read.
